Easy Creamy Keto Cauliflower Bake with Cheese and Bacon

Welcome back to the LOW CARB AND KETO CATEGORY section on Cooking Romania by Vivi. Today we’ll cook together an Easy Creamy Keto Cauliflower Bake with Cheese and Bacon.

First, let’s review a short list of approved keto and low carb friendly vegetables and 2 fruit (avocado and tomatoes) today:

  • Asparagus
  • Avocado
  • Broccoli
  • Brussels sprouts
  • Cauliflower
  • Celery
  • Cucumber
  • Green peppers
  • Kale
  • Lettuce
  • Olives
  • Spinach
  • Tomatoes
  • Zucchini

The ketogenic vegetables listed above are the nutrient-dense and high-fiber food you need accompanied by meat, seafood, cheese and other keto foods.

Cauliflower is quite popular in 2020, as it is totally keto friendly and somehow neutral when it comes to flavor and taste. My Granny used to say that boiled cauliflower smells like something bad – I’ll let you guess of what exactly :)).

Now, this recipe of Easy Creamy Keto Cauliflower Bake with Cheese and Bacon is quite regular in my diet. In November 2018, I began my low carb lifestyle and I am still sticking to it in 2020.

Romanian cheese is cașcaval

I would like to apologize to all of you reading my recipes for using the general term “cheese” in so many of my texts. In my home country, Romania, we have cow’s milk cheese, goat cheese, hard, soft, spreadable, processed, fresh, matured, pressed cheese. The type of cheese I use most often is “cașcaval“, which is similar to Cheddar or pressed cheese. This Easy Creamy Keto Cauliflower Bake with Cheese and Bacon is no exception: I used pressed cheese and it is just perfect!

You can boil the cauliflower for 10 minutes first, or you can use it raw, like I did. It is more crunchy and tasty. You can also use more butter, it is totally keto and it gives the dish a nice flavor. I love all my bakes overcooked a bit, so golden brown always goes towards burned brown for us.

Ingredients

  • 500 g cauliflower

  • 1 1/2 cups cheese (Cheddar, mozzarella, etc) cubed

  • 1/2 cup shredded/sliced/diced bacon (or more)

  • 1 cup sour cream

  • Butter for cooking the bacon and greasing the baking pan

  • Salt, pepper, chili flakes to taste

Directions

  • Preheat oven to 180 C
  • In case you are using frozen cauliflower, first thaw the florets
  • Slice the cauliflower in thick slices
  • Fry the bacon with a tsp of butter. Set aside.
  • Grease the baking dish (I melted a tablespoon of butter in the oven a bit)
  • Remove baking pot from oven. Place cauliflower on the bottom.
  • Add sour cream and stir
  • Season with chili flakes, pepper, salt
  • Add cheese cubes
  • Add fried bacon
  • Stir gently
  • Bake for 30 minutes or until golden brown

Notes

  • You can use fresh or frozen cauliflower; just make sure you cut the florets in thick slices.
  • You can add zucchini, olives, green pepper and make a super keto bake.
  • The calorie value for one serving is an estimate based on an online nutrition calculator. However, it depends on the ingredients you use.
