When I was a child, Sundays meant cooking with Granny Victoria. It was the only day of the week when I could see her, as under communist regime in Romanian we did not have a full weekend off (Saturday and Sunday), only Sunday. Granny had a way of making every dish feel special, but nothing could match the joy of making her famous carp fish roe spread. Granny trusted me with one of the most important tasks: mixing the carp fish roe. Using “lingura de lemn a familiei” – the oldest wooden spoon you have ever seen in your life passed down from her mother’s mother – I would mix by hand until my arm ached. We did not use a mixer. I did not know what carpal tunnel was at the time, but I surely had some similar symptoms! This was my initiation into Granny Victoria Paladi’s kitchen rituals!

When Do Romanians Have Fish Roe Spread?

Fish roe spread, frequently made with carp roe, is a staple at Romanian celebrations: Christmas, Easter, weddings, or even weekend lunches with family. Its luxurious texture and refreshing taste make it the perfect appetizer.

Ingredients

  • 100 g carp roe

  • 3-4 slices of bread (with crust; you can use just the crumb if preferred)

  • 300 ml sunflower oil (or more, depending on consistency)

  • 4-6 tbsp sparkling water

  • Juice of 1 lemon

  • 1 onion, finely chopped

  • Olives and parsley for garnish

Directions

  • Soak the bread
    Soak 3-4 slices of white bread in cold milk.
  • Whisk the carp roe
    Place the carp roe in a bowl (pre-cleaned and salted roe works best) and whisk for 1-2 minutes.
  • Whisk in the bread
    Squeeze the bread well and add it to the roe. Whisk for another 1-2 minutes until smooth.
  • Add a little lemon juice
    Gradually add a bit of lemon juice.
  • Incorporate the oil
    Start incorporating the oil, one spoonful at a time. Add it slowly; too much at once can cause the mixture to separate.
