I hope you are having a wonderful summer, spring, autumn or winter, depending on the time of the year you are reading this. Today, I am posting another easy low carb recipe, dedicated to mushroom lovers this time: Easy Low Carb Stuffed Mushrooms.

Low carb diet (or its version called keto, or keto lifestyle as I love calling it) recommends low quantity of carbs and promotes greens, cauliflower, avocado, tomatoes, eggplant and the mighty mushrooms!

With their filling, creamy texture, mushrooms are one of the keto friendliest vegetables. Not only are they low in carbs, calories and fat, but also rich in potassium, magnesium and zinc.

How can you cook mushrooms?

Although you can eat mushrooms raw or cooked, you should pay attention to the type of mushroom you are preparing, as some of them are not suitable for salads, for instance. Let’s see a list of mushroom dishes you can choose from:

Easy Low Carb Stuffed Mushrooms make for a delicious appetizer or a simple side dish (served with meat.)

Ingredients

  • 12 medium fresh mushrooms

  • 1 small onion chopped

  • 2 cloves garlic, minced

  • 2 tbsp parsley chopped

  • 1/4 cup Parmesan/pressed cheese grated

  • 3 tbsp cream cheese (soft)

  • Pepper, salt, chili flakes to taste

  • 2 tbsp olive oil or butter

Directions

  • Preheat oven to 180 degrees C
  • Line rimmed baking sheet with foil (optional)
  • Wash and clean mushrooms thoroughly. Remove skin if mushrooms are bruised.
  • Carefully remove stems
  • Pat caps dry with paper towels
  • Season caps with salt and pepper (optional)
  • Line and bake caps bottoms up in baking sheet for 10-15 minutes
    Finely chop stems, discard tough ends
  • Heat oil/butter in large skillet over medium heat
  • Add chopped onion, mushroom stems, pepper, salt, chili flakes
  • Cook for 2 minutes
  • Add garlic
  • Cook for 2 minutes
  • Set aside to cool off for 5 minutes
  • Stir in cream cheese, Parmesan cheese and parsley
  • Fill each mushroom cap with a good amount of stuffing
  • Place mushroom caps on baking sheet
  • Bake for 20 minutes or until mushrooms are cooked through

  • Choose the right mushrooms: use large, firm mushrooms like cremini or button mushrooms. They have sturdy caps that hold fillings well without collapsing during cooking.
  • Precook the mushroom caps: bake or sauté the mushroom caps for 5-7 minutes before stuffing them. This helps release excess moisture, ensuring your filling stays creamy and the mushrooms don’t turn soggy.
  • Don’t overload the filling: avoid overfilling the mushroom caps. A small dome of filling is ideal, as it prevents spillage and ensures even cooking.
  • Enhance the filling flavor: add texture and flavor to your filling with ingredients like breadcrumbs, cheese, garlic, fresh herbs, and chopped mushroom stems. Always season with salt, pepper, and a touch of acid (lemon juice or vinegar) to balance flavors.
  • Finish with a topping: sprinkle the stuffed mushrooms with grated Parmesan, breadcrumbs, or chopped nuts before baking. This adds a golden, crispy layer that contrasts beautifully with the soft filling.
